彩色特种小麦营养更丰富，维生素和蛋白质含量均比普通小麦高；富含天然的花青素、类黄酮、有机硒及可溶性多糖等多种微量元素，可以有效消除人体内的自由基，减缓衰老；富含钙、铁、锌、硒、碘等有益于身体健康的微量元素；人体不能合成的必需氨基酸的含量接近或超出FAO/WHO标准模式。
彩色特种小麦的种植有利于农业种植结构优化，提高农民收入水平，同时农产品深加工有利于提高产品附加值，优化农产品出口结构，并起到良好的示范作用。另外，本项目在整合上下游产业链的过程中，还可以进一步带动当地经济和社会的发展。
基地对彩色特种小麦的加工包括以下各系列： 2.1《天然微量元素》提取基地
以彩色特种小麦为原料，辅之其他植物、水果和花卉，引进目前国际上最先进的超临界CO2萃取生产线，提取活性酶（抗衰老）、花青素Ⅰ（抗辐射）、花青素Ⅱ（抗氧化）、有机硒（抗肿瘤）以及类黄酮（抗心脑血管疾病）等多种天然微量元素。
2.2 《七宝彩麦贡膳》生产基地
充分利用和发挥 “紫糯1号”、“紫糯2号”彩色高糯性小麦的特性和富含的各种人体必需的微量元素的潜质，开发高层次、高水平、高品位的适用于不同年龄阶段、不同需求的“七宝彩麦贡膳”等系列全新功能食品。“七宝彩麦贡膳”不仅具有其它麦种不具备的良好口感和营养，更重要的是具有养生功效。

3.1 植物蛋白——可食用可降解口香糖胶基
以新品种小麦“紫糯1号”和“紫糯2号”为原料，利用现代生物技术和新材料结构技术，开发出具有丰富植物蛋白的、既可食用又可在自然环境下自行降解的口香糖新型胶基——绿色环保、无污染，从而实现口香糖胶基材料的彻底革新，开启一个全新的口香糖胶基时代。
