摘 要
黑色啤酒又叫浓色啤酒,它是一种源自德国的深色拉格啤酒,最大的特点在于其颜色和焦香味,口味比较淳厚,略带甜味,酒花的苦味不明显。
本设计的目的是初步确定年产10万吨12°黑色啤酒工厂的工艺流程和工艺条件,并初步确定制麦、糊化、糖化、发酵等工段的设备的型号和数量,按照国家规定对工厂进行规范布置。中国是一个粮食大国,它为啤酒厂的建立提供了良好的原料来源。根据设计任务书,设计生产工艺流程并进行工艺计算并对重点设备和能量消耗进行计算,本设计以深色麦芽为主,玉米为辅料进行生产,此设计的重点是深色麦芽的生产,其余工艺和普通淡色啤酒类似,本厂采用连续发酵,日8批次糖化,每批次糖化投料量为6620kg,日产啤酒309000kg,吨酒耗粮为169.54kg/t,吨酒耗水为3220kg/t。

Abstract

The purpose of this design is to preliminarily determine Annual production of 100 thousand tons of 12 degree black beer factory of Technological process and process conditions,And determine the malting, gelatinization, saccharification, fermentation and other sections of the number and type of equipment,In accordance with the provisions of the state to regulate the plant layout.China is a large grain country, it provides a good source of raw materials for the establishment of the brewery.According to the design task book,Design production process and process calculation and calculation of key equipment and energy consumption,This design mainly in the dark malt, corn for the production of accessories,The focus of this design is the production of dark malt,The process is similar with ordinary ale,Continuous fermentation in this factory,On the 8 batch of sugar, each batch of glycosylated feed amount of 6620kg,Nissan beer 309000kg, tons of wine consumption of 169.54kg/t, tons of wine consumption of water for 3220kg/t.
