WINE SERVING FUNDAMENTAL

LEARNING OUTCOMEYou will be able to know how to open wine bottle correctly. You will be able to serve wine correctly. You will be able to match the wine glass with certain wine.

KNOWING WINE GLASSES

Normal Red Wine, Suitable for normal red wine, banquet service.

Bordeaux Red Suitable for red Bordeaux wines.

Burgundy Red

Suitable for aged red Burgundy wines or aged Italian wines.

KNOWING WINE GLASSES

White Wine, Suitable for any white wine, banquet service.

Champagne Flute Suitable for Champagne & sparkling.

Alsace Wine Suitable for Alsatian or German white wine.

KNOWING EQUIPMENTS

Ice Bucket,

Wine Basket Suitable for vintage red wine.

Corkscrew For opening wine bottles.

For service of white wine

OTHER EQUIPMENTSCLEAN SERVICE TOWEL WINE HOLDER OR STAND

Opening WineUsing a blade of corkscrew, cut the foil at the edge of the bottle. Peel off the foil using the blade of the corkscrew.

Opening WineOnce the foil is removed, the spiral of the corkscrew is placed in the center of the cork and crewed in. Do not let the spiral penetrate the cork completely.

Opening WineThe cork is slowly pulled out. The process must be as noiseless as possible.

Opening WineClean the mouth of the bottle using clean towel. The bottle is not to be corked again.

BEFORE SERVINGAllowing wine to breath, as soon as you open the bottle. Wine will feed the air on the small amount of air trapped inside the bottle between the wine and the cork, and on the oxygen naturally absorbed by the wine itself. Allowing a wine to breathe is, in effect, creating a rapid, but less sophisticated, maturation

Wine Service

The wine is served with label facing to the guest so that the guest can see the bottle at any time.

Wine ServiceOnly vintage red wine are served in wine basket. It should pour to the glass slowly.

Wine ServiceWhite wine is poured in the same manner of the red wine. The white wine should be poured in small quantity to preserve the freshness.

Opening Sparkling WinePlace the bottle in the ice bucket until chilled. Remove and wrap it with a napkin. Remove the foil with your right hand.

Serving TemperatureCHAMPAGNE 4.5 – 7 C WHITE WINE 7 - 10 C ROSE AND LIGHT BODIED RED 10 - 12.5 C MEDIUM BODIED RED 12.5 – 15.5 C FULL BODIED RED 15.5 – 18 C

Opening Sparkling WineDo not shake the bottle. Point the bottle away from the guest. Turn the cork with your right until it loosens. The napkin prevents the cork from popping.

Opening Sparkling WineThe champagne should be served at once. Ideal temperature of champagne is from 4.5 C – 7 C.
