年产80000吨柠檬酸厂糖化、发酵车间的设计
摘 要
本设计采用原料为薯干,将薯干除铁,磨粉,加水调浆,直接加入少量α-淀粉酶液化后,用喷射加热器加热灭菌、冷却,即可接种发酵。制备柠檬酸一般采用晒干的薯干作为原料。薯干含水10%-15%、淀粉70%左右、蛋白质6%左右。薯干原料中的蛋白质可作为氮源,供菌体生长。薯干原料中含有铁、钾、镁、钙等的无机盐,选用的黑曲霉C0527对这些无机盐不敏感,所以不需要对原料薯粉做任何预处理。本设计采用好氧液体深层发酵、钙盐法提取技术生产柠檬酸。这两种方法都是国内比较流行和成熟的生产方法,有着丰富的实际经验,易于操作,风险较小。本设计主要是糖化发酵车间的设计,主要包括物料衡算,热量衡算,糖化车间设备设计与选型,发酵罐设计,种子罐设计等设备的计算和选用。此外为满足根据国务院《节能减排综合性工作方案》的要求,柠檬酸行业主要淘汰环保不达标生产企业(适用GB19430-2004《柠檬酸工业污染物排放标准》)。本设计添加废水处理和废渣再利用的工序和设备设计。
本设计还包括发酵罐设计图,车间平面布置图,全厂平面图。

ABSTRACT
This design uses dry matter fermentation of raw potato as materials, simply dry matter flour, add water, mixing, directly adding a small amount of α-amylase liquefaction, sterilization, cooling, can be inoculated fermentation. Dried citrate commonly used as a raw material dry matter. Dry matter moisture content of 10% -15%, 70% starch, protein 6%. Dry matter protein raw material for cell growth as nitrogen source. Dry matter of raw materials containing iron, potassium, magnesium, calcium, inorganic salt, the choice of Aspergillus niger C0527 is not sensitive to these ingredients, so do not do any preprocessing of raw materials.This design uses submerged aerobic fermentation, extraction technology to produce calcium citrate. Both methods are more popular domestic production methods, with a lot of practical experience, easy to operate, the risk small. As the design for the saccharification, fermentation plant design and focus on the two workshop process calculation, equipment selection. Material balance through the whole plant, plant heat balance, determine the saccharification, fermentation equipment, fermentation tanks the main plant, seed containers, and piping design and plant selection. In addition to meet according to the state council \comprehensive energy conservation and emissions reduction plan\requirement, citric acid industry mainly eliminate environmental substandard manufacturing enterprises (applicable GB19430-2004 \acid industrial pollutants standards\This design adds wastewater and waste residue reuse process and equipment design.
