摘 要
铅是人类最早掌握其使用技术的金属元素之一,用途广泛,铅及其化合物
具有一定毒性,经常接触而不注意预防,就有可能引起铅中毒。铅是一种具有神经毒性的重金属,在体内有蓄积作用,可损伤脑组织、造血器官和肾脏。水和食物中都含有微量的铅,据测定,每人每天通过接触吸收的铅含量为300ug,其中90%来自食物。松花蛋作为人们日常生活中的食品之一,曾被报道其中铅含量超标,如今市面上销售的松花蛋都以“无铅”作为自己的卖点,是否真的能够放心食用而不会对健康造成影响,怎样富集松花蛋中的铅,就让我们通过实验来得出结论。

第1章 绪论
1.1 概述
铅为灰白色软金属,铅在地壳中的含量为0.16%,它很少以游离状态存在于自然界。人体中铅主要通过食物、空气和水摄入[7]。铅中毒是指环境中的铅经食物和呼吸途径进入人体,引起消化、神经、呼吸和免疫系统急性或慢性毒性影响,导致肠绞痛、贫血和肌肉瘫痪等病症,严重时可发生脑病甚至导致死亡的现象。铅能引起几乎所有器官系统紊乱,尤其是血液和神经系统[6]。铅中毒的危害主要表现在对神经系统、血液系统、心血管系统、骨骼系统等终生性的伤害上;铅对多个中枢和外围神经系统中的特定神经结构有直接的毒害作用。在中枢神经系统中,大脑皮层和小脑是铅毒性作用的主要靶组织;而在周围神经系统中,运动神经轴突则是铅毒害的主要靶组织。铅对血液系统的主要作用表现在2个方面,一是抑制血红蛋白的合成,二是缩短循环中的红细胞寿命,这些影响,最终会导致贫血。骨骼是铅毒性的重要靶器官系统,铅一方面通过损伤内分泌器官而间接影响骨功能和骨矿物代谢的调节能力,另一方面通过毒化细胞、干扰基本细胞过程和酶功能、改变成骨细胞-破骨细胞耦联关系并影响钙使系统从而直接干扰骨细胞的功能。由此可见铅中毒的危害之严重,因此预防和检测工作就变得非常重要。日常生活中含铅的废气、废水、废渣等污染大气、水源、和农作物,也危及附近居民。据测定,每人每天通过接触吸收的铅含量为300ug,其中90%来自食物。
松花蛋不仅为国内广大消费者所喜爱,在国际市场上也享有盛名。经过特殊的加工方式后,松花蛋会变得黝黑光亮,上面还有白色的花纹,闻一闻则有一种特殊的香气扑鼻而来。但近年媒体不断报道,在重金属类食品污染名单中,易造成铅污染的松花蛋尤为严重,其中铅平均含量超过国家标准限量值的1.2-8.0倍

针对以上所提到的,人们每天吸收的铅90%来自于食物,又根据市场上销售的大部分松花蛋都注明为无铅产品,通过分析实验来测定市售不同品牌松花蛋中铅的含量,来判断所谓的无铅松花蛋是否真的不含有铅元素,我们日常所食用的松花蛋是否能达到国家安全标准。
